The Museum District

This post is a bit belated, but we live in The Museum District. And, there is no joking around. There are a lot of museums within walking distance from our apartment.
So, one day we ventured out to the Natural Science Museum. It had some awesome exhibits, and Thursday afternoons are free admission!

This museum as you can probably tell was really quite awesome. If you ever come visit, we must go!

Black Bean Tostadas

Hi! Today I am linking up with Jaime at Polka Dots on Parade!

Let it be known: I love Mexican food. However, going out and eating bowl after bowl of chips and salsa is not conducive to the waist line. So, sometimes you have to lock it up. But, this recipe? It doesn't even make you feel like you have to lock it up because it's so delicious!

So, here are the Black Bean Tostadas that are a totally healthy/easy/quick Mexican option and a definite go-to in this household.

Here's the recipe:
1 Tablespoon Vegetable Oil
2 cloves garlic
1/4 teaspoon kosher salt
2 teaspoons Mexican Hot Sauce
1 teaspoon hot chili powder
2 cups black beans

1/4 cup sour cream
1/4 teaspoon ground cumin
1/4 teaspoon kosher salt
1 lime, zested

4 corn tortillas
3 ounces queso fresco
Salsa

Here are your steps:
1.  Mince 2 cloves of garlic. In a sauce pan, heat 1 tablespoon of vegetable oil over medium heat. Add the garlic and cook for about 45 seconds until lightly browned. Add 2 cups of black beans, 1/4 teaspoon kosher salt, 2 teaspoons hot sauce (to taste), and 1 teaspoon chili powder. Heat until the beans are hot and then cover and keep warm.

2.  In a bowl, whisk together 1/4 cup sour cream, 1/4 teaspoon cumin, 1/4 teaspoon kosher salt, and about 1/2 of the zest of 1 lime (I actually skipped this step and just added a little sour cream to the top of our Tostadas).

3. The recipe calls to grill your tortillas, however, we don't have a grill right now, so I put them in a pan on medium-high heat for 1-2 minutes on each side until they were lightly toasted.

4. Make your tostada! On top of each tortilla place a pile of the black beans, some salsa, sour cream, and a bit of queso fresco. Enjoy!

The Recipe was adapted from A Couple Cooks.

The Living Space

I thought I'd share with y'all  everyone how we decided to decorate our apartment!
I have seen it done where a bunch of pictures/art/whatever you want is just sort of made into a collage on the wall, and I wanted to create that for us.
At first, I thought we were going to have to buy a bunch of art, but as I unpacked our boxes I realized I probably wouldn't have to buy anything new (going from a 4 bedroom house, to a 1 bedroom loft apartment has some perks)!
So, I set out to figure out how people do this.

Step 1: I pretty much just laid everything out on the floor and arranged it until I liked the way it looked together. I did read that it is good to space your items about one inch away from other itmes, and 1.5-2 inches for bigger items. I didn't follow that exactly, I just spaced them as my eyes wanted to.

Step 2: We went to the store and got butcher paper, and I laid it underneath all the items, and traced. This step takes some patience.

Step 3: I cut everything out (this also requires patience), and taped it to the wall just as I had arranged it on the floor to make sure it still looked ok...which I thought it did. I did a little tweaking.

 Step 4: Hang the pictures!

 Step 5: Step back....

Step 6: Straighten with a leveler your Husband teaches you how to use..I think that's what it's called?

 Step 7: Enjoy!

I really do love it! It was a great way for us to hang up all the pictures we had in Omaha, instead of stuffing them in boxes in storage. I am probably going to add a few items as we go along, but for now I think it's a great start. It makes the apartment feel cozy.
